Pumpkin Pie

The pies are still hot....I made 2 for tomorrow's Canadian Thanksgiving. We're invited for lunch so these are perfect..... Here is the recipe...

Pumpkin Pie with Mascarpone

475 gr. mascarpone
1/2 cup brown sugar
398 ml pumpkin puree
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 pinch cloves
2 Large eggs

In a large bowl, combine mascarpone and brown sugar. Beat with electric mixer until well blended. Add pumpkin puree, vanilla and spice with the 2 eggs. Beat until smooth. Pour into prepared unbaked 9" pie shell. Bake at 350 for 40 min. or until set. Refrigerate 3 hours before serving. Garnish cake with whipped cream, seeds, pecans and don't forget to add a nice dollop of whipped cream.

I love Fall, it's my favorite season. How beautiful is the dining room with a simple centerpiece. picture from www.bhg.com. Enjoy your weekend!
