I have had the craziest week. The kids are back in school and enjoying it very much. Miss Tanya made the HS soccer team again this year. Daniel is very happy with his teachers and enjoys his French class very much.
Sweet P and I will be making giardiniera tomorrow. So much to do, so little time. I need some time off, time to reenergize, reorganize and reflect. Enjoy your weekend everyone!
Here is my Aunt's Giardiniera recipe from Italy
1 l white vinegar
1 cup of vegetable oil
1 cup sugar
3 tbsp of salt
3 kilos of mixed vegetables (cauliflower, peppers, zucchini, green beans, pearl onions, carrots)
Boil vinegar, vegetable oil, sugar and salt. Add vegetables in batches. Pour in mason jars with liquid. Store upside-down.
