Happy 2010


Happy New Year everyone!  Wishing you Peace, Love and Happiness. 

I am hosting tomorrow so I'm prepping today for the first day of the year.  I'll be making Lentil soup, it's our Italian tradition for Good Luck in the new year.


Lentil Soup

Ingredients:


2 cups dried lentils
2 tbsp olive oil
1 large onion, finely chopped
2 carrots diced
2 celery stalks, diced
1 garlic clove, peeled and halved
4 oz pancetta, diced
4 cups of chicken or vegetable stock
2 springs thyme or 1 tsp dried
2 bay leaves
pinch dried savory
1/4 tsp salt and pepper
1/2 cup flat leaf parsley

Place lentils in a pan filled with water and bring to a boil.  Drain immediately and rinse, set aside.
In a saucepan, add olive oil, cook onion, carrots and celery about 10 min.
Add garlic and pancetta, cook for 2 min more
Add stock, herbs, salt and pepper and lentils.  Bring to a boil.
Reduce heat to medium, cover and simmer for about 30 min.  Add parsley and mix thoroughly.

Hope your dinner was amazing...I am sure it was...your soup does sound yummy. I adore that image you have on your post today...what an amazing idea...I will have to remember that table setting..I love all the candles. Wishing you many many New Years blessings.

I have to tell you a funny story about lentils. Not only you cook lentils for the New Year but also carry some dry ones in your wallet for prosperity. So I am at an electronic store trying to return something and I already don't like the cashier and she doesn't understand me much(my accents). Get my receipt out and here comes the lentils...she looks at me and looks at the lentils. I could have explain to her why I had lentils in my wallet, but no, she was not nice to me!
